- 1/2 red onion, sliced paper-thin
- 1/3 cup minced cilantro
Dressing:
- 1/2 cup rice vinegar
- 2 tsp. honey
- 2 tsp. Reduced-sodium soy sauce
- 1 1/2 tsp. toasted sesame oil
- Pinch dried red pepper flakes
Preparation per 8 servings:
Preparation time: 25 minutes
Marinating time: one hour
1. Combine the cucumbers, carrots, red onion, and cilantro in a large bowl.
2. Combine the dressing ingredients. Pour dressing over cucumbers, cover, and refrigerate for 60 minutes. Salad may be eaten using a fork.

Get (2) 9-inch 99 cent landscaping bricks from Lowes – double wrap in HD foil – lay the bricks edge to edge on charcoal grate – slide to one side and dump a chimney full of unlit briquettes in the space between the bricks and grill wall. Add 30 lit coals and wood chunks on top – top vent wide open, lower vent 30%. 6-8 hours of ‘low n slow’ heat without having to add another charcoal.”

INGREDIENTS:
3.5 lb beef chuck steak
2 large onions
3-4 green peppers
15-20 bamboo skewer sticks
1 bottle of Lawry’s “SteakHouse” marinade
DIRECTIONS:
Cut your beef chuck steaks into bite sized or larger chunks. (size based on personal preference)
Place your beef chunks into a foil pan and pour your marinade over the meat. Marinate meat for 4-6 hours before preparing kabobs.
Once the meat is marinated, chop your onions and peppers into bite sized chunks. Skewer the meat, onions, and peppers in an alternating fashion on the bamboo sticks.
Cook the kabobs over medium heat for 15-40 minutes depending on your eating preferences… this should produce some great kabobs for your dining enjoyment!!
recipe for tator tot casserole:
needed ingred:
1 2lb bag of tator tots
1 can of cream of chicken
1 can of cheddar cheese
1 stick of melted butter
1 cup of sour cream
1 8oz bag of shredded cheese (cheddar)
Mix sour cream, can of chicken, can of cheese and melted butter.
Put tator tots in a 13×9 pan. Pour mix over tator tots.. cover with 8 oz bag of shredded cheese. Bake in oven at 350 for 60 minutes
It’s a standard in bbq lore… KILLER Burgers!!
What’s unique about these burgers is how they are prepared and how you choose to cook them. This is a great concept for an afternoon grilling at home or a camping experience.
All you really need is a couple pounds of hamburger… a roll of foil, and whatever vegetables you may desire. (potatoes, onions, carrots, ect.)
There are two ways to prepare your burgers,
1. create your patties, slice your veggies of preference laying them on top your patty, wrapping them individually in foil OR
2. slice and dice your veggies and mix them into the burger patty as you make them, once again wrapping them individually in foil.
3. You can even add your favorite BBQ sauce to each package for flavor!
Once you make the burger patties… there are a number of ways to cook them. Any way you choose will produce a terrific hamburger!
– place them on the open grill and cook 20-30 minutes, flipping them frequently
– throw them in the oven at about 350 degrees, turning them once or twice
– or if you’re camping (the most exciting way)… build an open fire, and burn down the wood into bright orange coals… place the foil patties directly into firepit coals (on the ground), cooking for roughly 10 to 15 minutes per side, flipping them a couple times or to your personal taste
This is a GREAT project to spend some quality time with your kids… and I promise they will be the absolute BEST HAMBURGER you’ve ever had! Give it a whirl, and be sure to come back & leave your comments.

- 2 cups (24oz) Ketchup
- 1/2 cup Worcestershire sauce
- 1 cup Light Brown Sugar
- 1/2 cup Honey
- 1 cup Apple Cider vinegar
- 2 ts lemon juice
- 1/2 ts black peppercorn
- 1 ts seasoned salt
- 1 ts smokey mesquite seasoning
- 2 ts minced garlic
- 1/2 cup of butter or margarine
- 1 small chopped onion

Let’s begin with the spices… chop or dice your onion and place it into a bowl. In no particular order, add your spices, lemon juice & vinegar (use the portions provided in the ingredients listing or feel free to use spicing of your own creation to flavor your BBQ sauce to your taste).
Now set your bowl aside and let the onoins marinate in the vinegar mixture for 15 to 20 minutes while you prepare the base.
Take a pot or saucepan and melt your butter, honey, brown sugar & worcestershire as a base. Now add your vinegar mixture and bring to a light boil. Once boiling… lower the heat and allow to gently simmer for 15 to 20 minutes.
In the final step, add your 2 cups of ketchup allowing the mixture to simmer gently for an additional 30-45 minutes.
Once the cooking is complete, allow your sauce to cool and refrigerate for 2 or 3 days before serving. This will allow all the different flavors to mix into a tangy… semi sweet bbq sauce.

Give it a whirl – what do you have to lose?
This is really easy to make… and Super Tasty…
What you need:
- 1 1/2 lbs of boneless & skinless chicken breast
- 2 green bell peppers
- 3 small onions
- 1 bottle of Lawry’s Teryaki marinade
- 1 bag of bamboo kabob sticks
Thaw, then cut the chicken breast into manageable chunks, then marinate them for 3-4 hours. Once the chicken is marinated, cut the green peppers into chunks while peeling the onion layers away before cutting into chunks.
After the meat and veggies are chopped up, skewer the pieces onto the bamboo sticks using 2 chicken – 1 pepper – 1 onion in multiple progression. The ingredients listed above should yield about 8-10 kabobs.
After hitting the grill, the chicken should not take too long to cook since the meat is cut down into chunks. Typically 15-20 minutes…
Flip the kabobs frequently to avoid burning the veggies.
Chicken Teryaki Kabobs are easy to make and a tasty treat for any backyard BBQ. They are a great additional finger food to any main course, or can be used as an appetizer… happy cooking!!
Country Style Ribs is one of my personal favorites!
“Country Style” is a thick meat cut… unlike the traditional spare ribs. Country Style ribs are thick and meaty. To prepare the ribs, I marinated them in Lawry’s Steak & Chop marinade for the afternoon.
Once they hit the grill, they need to cook for at least 30-45 minutes… flipping them frequently… due to the meat thickness.
The smoked flavor and the aroma of the marinade on the open flames make this dish an experience for the senses.
A couple of nice sides include Mexican corn mix with a ranch pasta salad. Like I said in the beginning, Country Style Ribs is one of my personal favorites, they are difficult to find, so you may have to visit your local meat market and request that style of meat cut! enjoy…
